GreekTsatziki Sauce

Tsatziki sauce is a Greek cucumber sauce that goes well on top of spicy dishes. I thought it would also be a good dip alternative for vegetables and pita wedges. Just don't think you're dipping into ranch dressing!



1 English cucumber, peeled
5 cloves garlic, minced
1 cup distilled white vinegar
2 shallots, sliced
1 cup picked sprigs dill
2 1/2 cups Greek yogurt
2 Tbs. extra-virgin olive oil
2 Tbs. fresh lemon juice
kosher salt & black pepper

Quarter cucumber, remove seeds and dice evenly. Put into mixing bowl.

In food processor, combine garlic, vinegar, shallots and dill. Pulse until finely chopped (not pureed). Add mixture to cucumbers. Fold yogurt, olive oil, and lemon juice into mixture with spatula. Season liberally with salt and pepper (start with 1 Tablespoon salt).

Can be stored for up to 1 week in covered jar in refrigerator.
